chore(deps): hold electron-builder back at ^26.0.12

Reverts the electron-builder bump and both fixes it required, leaving 43
bumps. The packaged Linux job builds a snap that cannot start:

26.15.3 rewrote the snap target — 26.0.12 had one `snap.js`, 26.15.3 splits it
into `SnapTarget` plus `core24`/`coreCustom`/`coreLegacy` and moves the desktop
integration scripts out of the Go binary into templates staged through a new
`launch-scripts` dump part. The generated `command.sh` execs
`$SNAP/desktop-init.sh`, and with our core22 strict config plus custom
layout/plugs that script never lands at the snap root.

Diagnosing that properly means iterating on real snap builds, which needs
Linux and snapcraft, and it puts the whole snap/flatpak/afterPack contract at
risk — too much to carry inside a 44-package sweep for a dev-only tool. Same
call as epg-parser: it gets its own PR.

The two follow-ups go with it, since both were consequences of that bump: the
`engines` floor came from @electron/rebuild 4 (`>=22.12.0`; rebuild 3 asks for
`>=12.13.0`), and the node-gyp resolution fix existed because rebuild 4 dropped
the `@electron/node-gyp` fork the build script scanned for. Both belong in the
electron-builder PR. Re-verified the addon still builds against Electron 41 on
the restored path.
